I never made a dessert in the slow cooker so I decided to search around, and this is what I found.  Butterscotch brings me back to my childhood.  I always remember my Grandma reaching in her pocketbook for a butterscotch sucking candy.  This cake reminds me of just that!  I decided to serve it with whipped cream so that I didn’t add many calories with vanilla ice cream.  I have to say, vanilla ice cream would be incredible on it!

There is no denying my obsession with pasta.  And these are the best pastas (besides Fusilli which is my all time favorite).  I wasn’t sure about the leeks but they turned out delicious.  I can’t even describe how much I loved this dish.  It was light, flavorful and so spring like, which I’m praying is around the corner.

When I lived in the South I learned that Red Velvet is a very popular cake.  I decided to make these into cupcakes.  My true inspiration here was my friend Tricia.  She advised me not to visit her unless I brought her cupcakes!  So here they are.  Oh and by the way, Tricia loved them!!!

I’m sort of a snob when it comes to baking.  I think it’s because I like the precise method.  These cookies are a perfect example of just that.  They have a super moist texture and have incredible flavor. It made so many little bundles of joy that I decided to freeze some.  As long as you put wax paper in between they stay wonderfully.

Yummmmmm!!!  Last week I was watching the Today Show and Giada was on.  She whipped up this soup quickly and suddenly there I was making it!  So it was sooo good that I decided to make another pot of it and freeze it for my friend’s Melissa and Andrew!  I think they will love it as much I did!  The first attempt I followed the recipe exactly the way Giada said and after that I substituted chicken broth for the beef broth.  I am not a beef broth fan, so even though this is a beef recipe I prefer the chicken broth, or vegetable would be great too!

Anyone who knows me knows how I feel about berries.  Not so good!  I must be honest, sorry!  I tried to like them but it’s just not working out for me.  I like Strawberry flavoring but that’s about it.  Enough about my likes and dislikes. When I saw this recipe I instantly said to myself  “get over the strawberry, they are PINK” so I made them.  I brought them to my friend Melissa and Andrew’s house for Valentine’s Day!!!  I loved them….they were fab!!!

Who doesn’t love chocolate?  Well I guess there are some people out there.  Something I’ve always loved together is Mint and Chocolate.  These brownies are the perfect combo for me.  The key here for me is the thickness of the brownie.  I used an 8×8 square pan.  To me, these came out perfect!  I have a better idea, ask my friend Donna, she was able to taste them about 10 minutes after they came out of the oven. I actually wound up giving her most of these for her and her daughters to enjoy with a nice glass of milk!

I’m not sure how I became obsessed with Corn Chowder but this was a winter no brainer for me.  I think the texture of this soup is incredible. Of course I couldn’t just make the normal recipe.  I had to do this times 4!!!!!  Yes you read correctly….4 times the normal recipe! Since my bestie Beth and I love to cook together and she is all the way in Israel I find it comforting to visit with her Mom, Amy.  We decided we were going to make this soup together.  What an adventure!!!  We couldn’t get the vegetables to become tender. It took way longer than the recipe said and we couldn’t understand why….now we figured it out!  Anytime you increase a recipe like this you need to realize that the time is increased as well.  Now it’s all clear!  So we were happy with the results but it was an all day affair!!!  All because I missed Beth!

My new obsession is Scones.  They are so crumbly and delicious!!!  I was playing around online, searching for recipes and found a few goodies.  While I was online, I was chatting with Beth (as usual) and I was telling her how I was looking for a good scone recipe.  She mentioned that her friend, Nadia, in Israel makes these incredible scones and that she had the recipe so I said, “Send it Over” before you know it, I’m running to the store to get dried apricots!!!! These scones were delicious.  I am not a ginger lover and I really enjoyed it in these scones.  Shocking!  Next time I’m going to do dried blueberries and maybe lemon.  Can’t wait to try it.  I will repost with the outcome, in the meantime, definitely try these yummy treats! Thank you Beth and Nadia!!!!!
